Winegrowers Cellarers

Located in the heart of the vineyards, the Aigle Château region has no shortage of producers of top quality wines. For several years now, 19 Winegrowers Cellarers have been in place at the Château. All offer a wide range of regional specialities for aperitifs, dinners and even banquets.

Their wines are also available on the menu of the « Pinte du Paradis » restaurant and on sale in the boutique.

Aigle Commune

The Aigle Commune is owner of around 8 hectares of vineyards located principally in its own territory. Chasselas is the main grape variety grown there.

Aigle Commune wines comprise three vintages : « La réserve Chasselas » whose label designed by artist Frédéric Rouge has remained largely unchanged since its creation in 1902 ; « L’Aigle rouge nobles cépages », a blend of Pinot noir and Gamay. Finally there is the « Clos Maijoz » : this Chasselas is vinified and bottled in the cellars of Aigle Château.

Anne Müller Yvorne

Always ready to share her enthusiasm, Anne will be more than pleased to welcome you into her vineyard cellar in the centre of Yvorne village.

Grown and vinified in complete harmony with the environment and using biodynamic methods whose principles follow the natural rythmn of the soil and plants according to the lunar calendar, the wines personify the relationship between winegrower and nature; a subtle alchemy where ideal meets the hand of experience.

Artisans Vignerons d'Ollon

The vineyards of Ollon are split up into five sectors : the village, La Roche, Antagnes, Verschiez and St-Triphon. Each are graced with abundant sunshine. This and the diversity of soil composition are all reflected in the final flavour of the Ollon wines.

It was way back in 1906 that 47 winemakers keen to share their ancestral knowledge, to continue their traditions and to create exceptional wines, came together to found the « Viticultural Association of Ollon

Using his skill, expert knowledge and keen eye, the cellarmaster has created the stuff of legend for you in the form of wines « Caviste Blanc », « Caviste Rouge » and the « Faveur des Muses ».

Artisans Vignerons d'Yvorne

The AVY, or Artisans Vignerons d'Yvorne, is a cooperative society founded in 1902. Today, a 10 strong team of professionals cellar, vinify and market the wines produced by the 120 or so members.

The AVY produces exclusively wines which correspond to the appellation AOC Yvorne Chablais and processes a harvest from the 55 hectares of vines spread over the 160 hectares which make up the wine producing area. The cellaring comprises 85% Chasselas and 15% noble red grape varieties.

The exeptional wines produced marry expert ancient knowledge with the very latest modern techniques. Forever looking to the future, the winegrowing artisans of Yvorne strive to produce ever more generous and elegant wines. And for this reason their wines are regularly feted and highly prized.

Cave Borloz

Small family estate managing 2,5 hectares spread over 10 plots. Cave Borloz’s aim is to offer wines of the highest quality whilst cultivating the vines as nature intended.

The wines from Cave Borloz are vinified in stainless steel vats for Chasselas and Pinot-Gamay and in oak barrels for the speciality wines. Moreover, the proof is in the tasting.

Cave Borloz takes enormous pleasure in allowing visitors to discover the treasures of their cellars with tailor-made personalised tours. Cheers !

Cave Emery

From the vine to the glass, the products emanating from Cave Emery reflect not only the very soil of the region but also the men who work this land.

Their aim is to create perfect harmony in a bottle. Winemakers-cellarmen, they cultivate their vines and nurture their wines.

Family domain since 1883, 5 generations have left an indelible imprint on both vineyards and wine, preserving the original traditions of the area. From the winemaker of the past to the oenologist of today, the Emery brothers continue this same philosophy, leaning heavily on the knowledge that has been handed down from generation to generation as well as employing the most modern of winemaking techniques.

Cave Moret

The "Cave Moret" is located some 50m from Aigle Château. The family has been around for generations as cellarmen in Aigle, contributing enormously to the shift towards oenology.

Moret family members welcome visitors into their cellar to sample their renowned Aigle vintages. Wine tasting is the perfect way for all to share in a convivial moment.

Today of course they offer their notable Chasselas but they also produce red wines, wine matured on its lees, barrels, late harvests, etc. Open on Saturdays from 10h to 12h, 29 chemin du château in Aigle or by appointment.

Cave du Prieuré

Created by Paul Tille, the "Cave du Prieuré" was taken over in 2001 by Henri Magistrini. Descendant of the founder Philippe Tille is still owner of the vineyard.

A vineyard of some 5 hectares, the "Cave du Prieuré" is located for the most part in Aigle with the remainder in Ollon. The Chasselas grape represents 45% of the grape variety whereas the Pinot noir and Gamay grapes represent 35%. Gameret, Garanoir and Diolinoir also make up some of the grape varieties cultivated.

The "Cave du Prieuré" also buys the produce from an additional hectare in the commune of Aigle.

Domaine Baud-Bel

The 37'000 m2 viticultural area, painstakingly established by Hugues and Geneviève Baud-Bel, extends over three regions. From Lavaux with « Les Côtes de Pallens » to Montreux, in central Valais between Martigny, Vétroz and Sion as well of course in the Chablais Vaudois.

In Chablais Vaudois, the Baud-Bel family cultivate and offer the 3 « Whites » Chasselas of Aigle, Ollon and St Triphon, a Gamay Rosé and 6 red wines which herald from the Pinot noir, Gamay and Mondeuse varieties. These different grapes and the extremely varied climates result in at least 20 different vintages to satisfy all tastes.

Domaine Les Portes Rouges

The "Domaine Les Portes Rouges" was created at the turn of the 20th century. The house which was built in 1930 by Charles Ansermoz and René Isoz was extended in 1963-64, 1975 and 1985 and was then restored between 1995 and 1996.

The vines are grown traditionally using the 3 horned goblet vine training system for the Chasselas and the simple guyot system for the other white and red varieties. The vinification takes place in oak barrels with capacities that range from 225 litres to 6000 litres. The speciality whites and reds are not chaptalised.

Visit and tasting by appointment only. Varieties grown : Chasselas, Pinot gris, Gewürtztraminer, Pinot noir, Mondeuse, Gamaret, Diolinoir, Marcelan, Primitivo, Cabernet Franc, Malbec, Mara, Merlot, Syrah, Tannat, Carmenere, Galotta.
